This awesome recipe is from curiouscountrycook.blogspot.com, and it's super simple. I used pepper jack cheese in lieu of cheddar cheese. The pepper jack cheese added a nice kick to the zucchini. Now, I just need more zucchini... I ate four as soon as I pulled them from the oven.
