Mini Apple Pie.
I have mentioned in the past that I like recipes with minimal prep and little clean up. This recipe from Taste of Home for mini apple pies is perfect. I used a pie crust pastry from the store and filled it with apples mixed in cinnamon and sugar. Baked it, then topped it with vanilla ice cream. Easy and quick. It wasn't my favorite dessert. I think it needed more apple filling. But it was perfect for serving to a guest we had for dinner that was unplanned.
