Easy. Nothing fancy. Great taste. I saw on a blog where a lady added a peppermint jello dry mix to her cookie batter to make Christmas cookies. I had pistachio pudding mix on hand so I added it to the cake batter to make muffins. I then added crushed pistachios to the top and drizzled with cream cheese frosting. I will make these again for a quick and easy treat. It would be easy to try several variations.
